How to Make Your Own Kombucha

Ingredients for 1 litre of Kombucha

  • SCOBY with 200ml starter liquid
  • 60 grams of sugar
  • 8-12 bags of high quality green tea or 6 grams loose tea
  • 1 litre of water


Instructions

  1. Boil the Water
  2. Brew the tea and sugar in a jug or saucepan
  3. Let the sweetened tea cool to room temperature and remove tea bags / all loose tea
  4. Add your SCOBY and starter liquid into a large glass jar and then pour in your cool tea
  5. Cover the jar with a breathable lid / cloth and secure it with a rubber band.
  6. Let it ferment at room temperature for 7-10 days, tasting periodically until it reaches your desired level of tartness.
  7. Bottle and flavour (optional): Once fermented, remove the kombucha (or remove SCOBY if using batch brewing method). Pour the kombucha into glass bottles, and check out our Kombucha Recipe Club for some flavouring inspiration.

Low-Sugar Mocktail Recipes

1. Kombucha Mojito

Ingredients:

  • 1 cup homemade kombucha
  • 1/2 lime, juiced
  • 5-6 fresh mint leaves
  • 1 tsp honey or agave syrup (optional)
  • Ice cubes
  • Soda / tonic water

Instructions:

  1. In a glass, muddle the mint leaves with lime juice and honey/agave syrup.
  2. Add ice cubes and pour in the homemade kombucha.
  3. Top with soda / tonic water and stir gently.
  4. Garnish with a lime wedge and mint sprig.


2. Berry Bliss Kombucha Mocktail

Ingredients:

  • 1 cup homemade kombucha
  • 1/4 cup mixed berries (fresh or frozen)
  • 1/2 lemon, juiced
  • 1 tsp honey or agave syrup (optional)
  • Ice cubes
  • Soda / tonic water

Instructions:

  1. In a blender, blend the mixed berries with lemon juice and honey/agave syrup until smooth.
  2. Fill a glass with ice cubes and pour in the berry mixture.
