Why Spring is the Perfect Time to Start Brewing Kombucha

As the weather warms up, our bodies naturally crave lighter, fresher foods and drinks that will help us shake off the winter blues. Kombucha is the perfect beverage to support your health and wellbeing during this time of year.

Not only is it delicious and refreshing, but it's also packed with probiotics, antioxidants, and other beneficial compounds that will help to boost your immune system and leave you feeling energised and revitalised.

In spring, the weather also starts to get a little warmer, which is perfect for brewing Kombucha. The UK temperatures from spring until late autumn are the best time to get started with a new brew. This is because when your SCOBY first arrives with you, it will be in a dormant state, and stored in a very strong Kombucha vinegar.

This Kombucha vinegar has no 'fuel' / sugar left, and so that causes your SCOBY to go dormant. When your SCOBY is mixed with a fresh fuel source (sweet tea), to start up your first Kombucha brew, it 'wakes up', and this is the most important time for it to be kept warm.

There are ways to get your brew going in the winter, but it is harder and may take some patience. We always say that if you have an airing cupboard, a fridge or freezer which gets warm on the top, or a specific room or spot in the house which keeps the heat in better, that is the place to start your first brew off.

Once your SCOBY is more established (after the first 2 brews) it will be able to withstand lower temperatures.
