The live culture of Kombucha. Forms as a cellulose matter, which grows over time, on the surface of a LIVE Kombucha, and is made up of live bacteria and yeasts.
When a SCOBY and its starter liquid is added to sweet tea, the live bacteria consume the sugar and transforms it into organic acids, vitamins & minerals which gives the Kombucha the low sugar content and that tarty kick we all love.
